Meet Timothée Stroebel. Just like Charles Dufour, Raphael (Bichery), and Christian (Morgane's partner at Dandelion), Timothée studied winemaking and viticulture in Beaune ("If I hadn't gone to Beaune [instead of Avize], I wouldn't be making the wines that I make today. I wasn't confined by a set way of doing things. Everything was possible."). He graduated in 2001 and took over his uncle's vines in Villers Allerand (Premier Cru village in Montagne de Reims).

Two of his professors at Beaune introduced him to organic viticulture and enology, and he was quickly convinced. He set out to convert his uncle's vineyards immediately. 

 

Today, he farms just under four hectares of Pinot Meunier, Pinot Noir, and Chardonnay here planted over three parcels.
